Welcome back with another Balinese food! Today I will talk about Balinese Food that comes from Klungkung district, named Serombotan.
Serombotan is a Balinese food, the typical food of the Klungkung area which consists of various vegetables such as sprouts, long beans, spinach, water spinach, beans, and round eggplant. All types of vegetables are boiled over medium heat until cooked except eggplant.
Besides being made from various kinds of vegetables, serombotan is also served with several types of nuts. Such as red beans, green beans, peanuts, and black beans, so people call them serombotan beans.
There are 3 types of special spices used for serombotan :
– The first is grated coconut sauce or better known as “Sambal Nyuh”. How to make Sambal Nyuh? Before being grated, the old coconut is burned over low heat, then mixed with garlic, chili, salt, shrimp paste, and a little mashed Balinese sugar.
– The second seasoning is peanut sauce, which is a mixture of finely ground peanuts, garlic, chili, salt, shrimp paste and Balinese sugar. Then fry in a little oil so that the spices cook and last longer.
– For those who like spicy, the last seasoning is the most appropriate choice. This seasoning is called “Unyah Sere Limo”. Consists of chili, salt, shrimp paste, and lime juice.
